German Chocolate Truffles
It's my birthday this week. I take after my dad though. I don't like cake. I don't even like it for my birthday. I'd rather have another treat. But . . . if I had to pick my favorite kind of cake it would be German Chocolate. Now that's a cake worth eating. Knowing that you probably won't be surprised to find that I love these German chocolate truffles. Rich, chocolaty goodness with that perfect coconut chewiness. You would never guess they're healthy and free of refined sugar. I love to whip up a batch of these on a Friday night after the kids are in bed for a special treat for my husband and I to share.

(adapted from this recipe)
3/4 cup pitted dates
1/2 cup pecans (walnuts work too)
2 tablespoons cocoa powder
2 tablespoons unsweetened shredded coconut
1/2 teaspoon pure vanilla extract
pinch of salt
1. Measure all ingredients into a food processor. Blend until well combined, about 30 seconds.
2. Squish mixture together and and roll into bite size balls. Store in airtight container. I like to keep them in the fridge.
