Granola Bar Bites

These little bites have become a favorite at our house.  They're the perfect combination of nutty, sweet, chewy, chocolaty goodness.  My kids loves to grab a few for a snack in the afternoon or after dinner for a treat.  They're just right for popping into little mouths.  

I rarely buy granola bars anymore due to a peanut allergy in our home.  Peanut free granola bars are hard to find, expensive, and full of undesirable additives, but I feel good about my kids eating these homemade bites full of good-for-you ingredients.

Granola Bar Bites

1 cup quick oats
1 cup unsweetened shredded coconut
1/2 cup ground flax seed
1/2 cup nut butter (I use sunflower seed butter)
1/2 cup mini chocolate chips
1/3 cup honey (preferably raw)
1 teaspoon vanilla
pinch of salt

1. Combine all ingredients in a bowl and mix until well incorporated.
2. Roll mixture into bite size balls.
3. Store in airtight container for up to one week in fridge.  Makes 25-30 balls.

  5. Thanks for these recipes! I usually only have regular oats on hand, not quick oats. Do you think I should soak them first... or something?

    1. Heather- you can use regular oats. The texture will just be a little different.
